Judit, is the pizza issue a gluten thing? I've made pan pizza with a crust made out of shredded zucchini or potato. Cook the crust first (Hello olive oil), then top it and cook a little longer.

yes, i use a pizza stone. my oven has a convection setting as well, the fan really bumps the temp up past 550-so i'll toggle between bake and convec., that way the cheese doesn't get burned but colored nicely and the crust gets burnt a bit adding flavor. the pie above is 00 flour and AP, creating a "neapolitan hybrid"- 3 day rest on the dough.

I think I'll succeed by starting from scratch, adding egg and cheese to cooked cauliflower that's squeezed dry after steaming. Bake it partway, flip it, add toppings and bake again. Or at least that's what seems like the right way to do it.

Place by my house called Parry's isn't bad. Best slice I had this year was in Brooklyn. There is no equivalent to east coast pizza in Denver.
