Whats for dinner?

We made tacos. Nothing fancy. Kept it basic tonight. 

Made the traditional Corned Beef and Cabbage in the Dutch Oven, added red onions, garlic, dill weed, and celery salt for that extra little something.

We've got all sorts of stuff piled up from our panicked pandemic shopping sprees.

It's kind of a potluck at this point.

Almost forgot it's St Paddy's Day

Was going to make shepherd's pie w/ lamb and lentils, but now that I'm working late that's shifting to tomorrow.... takeout Thai the answer, since all of Portland's restaurants are closed for in-house dining.

While it's tempting to go after the "new" stuff, I've been very selective about trying to eat that which will spoil first.

Taco Wednesday!

We grilled chicken last night. Baked beans, rice and an avocado. Plenty of those at the grocery store. I am ok with that.  Grilled an extra breast for enchiladas tonight. 

I keep thinking I want to go to the store and buy a few of the random plentiful items and see what we can make for dinner. 

Remember:  every trip to the store is yet another exposure; all while testing has been woefully insufficient and the majority of infected individuals are asymptomatic. 

Thanks FaceOnMars.  In Portland, the local farms that are supplying all of the farmers markets in the metro area are converting to online sales and delivery of fruits / vegetables / frozen local meat and fish, which makes it easy to avoid the store for fresh items.  Nice way to support the local economy -- hope others here have similar resources.  I order from a local distributor, organicstoyou.org, that buys from local farmers and also sells pantry items.  Of course, these farm deliveries are only helpful if you actually enjoy the mystery of discovering "what's inside the box this week?" and, of course, like to cook! :)

I read that some people are concerned about how many (possibly infected workers) handle produce before it's on sale at the grocery.  When I lived in Spain, I learned from my tias: They fill up 2 basins w/ cold water, basin 1 gets a few drops of bleach for the first plunge, and basin 2 has clean water for the rinse.... then store veggies like usual. 

I just dug out my backpacking food.

Problem is, that Backpackers Panty Chana Masala only tastes good in the backcountry sitting in the dirt exhausted from a 10 mile 2000 ft vertical hike...

We do have our earthquake supplies in the shed outdoors and may dip into that sometime, once the zombie apocalypse arrives, but I think most of that food is backcountry-esque.  It's amazing how much better crap food tastes good when you're out in the middle of nowhere.

Would probably be a good idea to eat that stuff before it expires, anyway.

Pork chops, loaded smashed potatoes, asparagus.

Local wild caught rockfish last night. flour/seasoning, egg, breadcrumbs.   I add a little smoked cayenne powder to the fresh squeezed  lemon juice. spoon on.  Works.

So true, made me laugh out loud.

I went to the secret Indian grocery earlier this week and picked up an assortment of frozen paratha, samosa, and a few things I don't know what they are but they look good. I'm having spinach potato paratha with Indian carrot pickles, cilantro chutney, yogurt, and red lentil dal.

We grilled chicken last night. Also had wild rice and corn. Not picture worthy, but it was nice to sit on the patio and enjoy the first sunshine since Saturday. 

Scrambled eggs with roasted red peppers for bfast today. 

 

 

Sunday...   pork chops marinated in garlic, olive oil, salt and pepper...  Hand cut french fries and sauteed asparagus. 

 

Monday... leftovers 

 

Tuesday.... Chicken pot pie and roasted red potatoes.

Marinated cheap-cut steak with red wine/shallots

"Snappy green beans" Bailey's Smokehouse style (flash-fried, then dusted with dry rub)

 

Chicken pintos broccoli cheese rice

Hearty Meatball Stew and steamed broccoli.

Now listening to Dinner and a Movie.

Nice staycation. Sheltered in place.

Grilling steaks and making garlic parmesan red potatoes in the instant pot. A few beers as well. 

It sure is different staying home like this. We find ourselves thinking of the next meal as soon as we are done with the last. Also craving all kinds of things we normally do not eat.  

Chicken roasted in a cast-iron pan over a bed of carrots,celery and green pepper.  Really should be some red potatoes in there, but I already have some red/smashed made.  Some commercial cole slaw on the side.

Hot and sweet Italian sausages fried with some sweet peppers and sweet onions. In lieu of fresh rolls, I'll probably serve them on corn tortillas.
