I saw a recipe I had to try;

Bacon Jam!!!

Yes, bacon jam, it was easy to make, and was pretty freaking tasty too! I saw it on the "Next Food Network Star", and had to give it a try, so without further ado;

Bacon Jelly (and if you overcook, candied bacon, lol)

(essentially, a pound of bacon cooked crispy and removed, saute half a white onion, add a half cup apple cider vinegar, third cup dark brown sugar, some thyme leaves, and cook down to jelly consistency, then add the cooked bacon)

What are some of your sugary summer successes, or rascally recipes so sweetly satisfying?  

I like to dust bacon with brown sugar and throw it in the smoker for a few hours. It’s like a bacon candy stick.

I'm going to have my grand-daughter help me make a cheesecake this weekend, but no swine will be harmed.

My wife just picked a bazillion meyer lemons off of our tree and made a bunch of lemon curd.

 

We've also been having lemon marinade on Portobello's, lemon dressing on greens, lemon-and-green peas on pasta, and lemon juice (with parmesan) on shredded/sauteed zucchini.

My sister in Berkeley has 2 Meyer lemon trees and they seem to produce and ripen almost constantly.

You are making good sounding lemon food, John.

I love a touch of lemon on many foods, we had a tree in the backyard growing up, such a useful fruit.  Made lemon bars last year, delish!  (and cheesecake one of my favorite food groups!)
