My middle kid just got her degree in Environmental Engineering, and accepted a job in Princeton. She'll be living in the New Brunswick area. I hope she doesn't Vermont up Jersey.
New Brunswick is not a bad place. Lot's of international food joints. Rutgers is there so I imagine a lot going on there. Princeton is a pretty town. What does Vermont up mean?
Traffic is bad around New Brunswick & surrounds. But yes, lots of interesting Indo-Pak and Asian places to eat.
If I were working in Princeton and commuting by car, my preference would be somewhere North like Kingston or Flemington, just for clean air. However for a young person, NB area has more going on and the trains go to NYC.

So New Brunswick is right there on the Raritan River. Its population is only around 55-60 thousand. But the nearby towns along Rte. 1 and Rte. 27 make it all one big exurban sprawl.
Lots of great Asian and Indo-Pak restaurants in the area. Rte. 1 and Rte. 27 both have "Asian Food Courts" which are good sized indoor malls and/or strip malls with a variety of Korean, Vietnamese, Japanese, Thai and Chinese eateries. If I'm ever in the area I stop and get a Good bowl of Phö or some other soup with squid bits floating around.
There are also many Latino spots in some nearby areas, and Indian / Pakistani places.

That's what I'm thinking, Doolittle. They are living in a brand new apartment complex geared towards young professionals. There's an African market next door, and Latin and Asian restaurants all around. It's a 5 minute Uber to the bars.
I spend about 3 - 4 weeks or so a year down in New Brunswick, big client of ours is located there. Lots of food, lots of life, and you can take the train to NYC or Philly , both short commutes. Across the river there is also a decent amount of restaurants. There is a Greek place over there that is a real, REAL authentic multigenerational restaurant - Pithari Taverna...MMMMMM
the only draw back is there is a substantial homeless population that panhandle frequently
I imagine not now because of Covid, but is that food truck court at Rutgers still there. They had an episode on I forget either Andrew Zimmern or AnthoneyBourdain. I ate there a few times years ago.

There is a Spot where Rte. 18
There is a Spot where Rte. 18, Rte 1 and NJ Turnpike converge near Menlo Park Mall. It's a primary "Jersey Triangle".
Actually it's the feared "Rte. 287" that is a constant traffic bummer for commuters. Always clogged during the home commute.
I don't really get up there too often. It's a bit Urban for me.
