I love to pompano fish. They are by far one of the best eating fish. It is white, oily, sweet fish. NEVER filet a pompano. ALWAYS cook them whole. There is a oil sack in the top of the fishes head and when you cook it it explodes and the top 1/3 of the fish gets a butter flavor. Just like stealing a bite when Mom wasn't looking.
6 per person 12 inch minimum from fork to nose, only one over 20 inches.
The bite has been on since Halloween and will peak out in March-April.
