Researchers at UC Berkeley might have found a way to genetically engineer yeast for beer

Genetically modified yeast with basil and mint genes added gives beer a hoppy flavor without the need to add the actual flowers.

Hops do other things for Beer besides flavor & bittering.

They aid in coagulating unwanted proteins for one (clarity).
Also have antimicrobial properties (prevent spoilage).

For Beer consumers, the phytoestrogens in Hops may help prevent breast cancer.
According to this study,  they prevent Liver damage in mice (compared to unhopped beer).

My own theory and perhaps experience is leading me to believe that too much hops in your gut damages the good bacteria population you host that helps with digestion.   Hops is fragrant angel of death.
